Sesame Shrimp Toast

8 servings

1 lb Shrimp, peeled and deveined
2 Egg whites
3 cup Oil for deep frying
3 Slices of day-old bread
1/4 tsp Salt
1/2 tsp Cornstarch
1 cup White sesame seeds


1. Peel and devein the raw Shrimp. Then chop and mash the Shrimp to soft pulp using a cleaver or food processor. Mix the Shrimp meat with salt and cornstarch. Remove crust from bread and slice each into 6 rectangles. Separate and beat. Mix egg whites completely with the Shrimp mixture.

2. Because the Shrimp mixture is a little runny, wait until you are ready to deep fry before spreading mixture on bread. Put about 1 tsp of the Shrimp mixture on each piece of bread. Set them on plate and sprinkle with raw white sesame seeds.

3. Heat oil slowly to medium hot. Test with crust of bread. It should brown in 10 seconds. Deep fry 6 pieces at a time, Shrimp side down, until they brown and then roll them over to brown the bread. Fry for 3 more minutes. After frying, remove to a warm oven until you are ready to serve. Do not keep warmed in the oven over 40 minutes before serving.
