Shrimp Salad (Southern Style)

Serves 4


1.5 lbs of Medium or Large Shrimp, preboiled, peeled, deveined, & chopped.
1/2 cup Finely diced celery
1/2 cup Finely diced cucumber or Sweet Relish
2 Tbs Minced shallots or yellow onion
1/2 cup Mayonnaise
2 Tbs Lemon Juice
Salt & Pepper to taste


1. Boil the Shrimp in Old Bay Seasoning or Zatarain's Seafood Boil the day before & refrigerate. This way the Shrimp become well-seasoned.

2. Combine all ingredients together and refrigerate till cold.

3.Serve on a bed of Romaine Lettuce with a glass of Iced Tea.
