Seafood Creole

4 servings


1/4 cup Vegetable oil
1 cup Hot water
1 lb Fish fillets cut in 1" cubes
1/2 cup Chopped parsley
4 finely Chopped garlic cloves
1 1/2 tsp Salt
1 pinch Cayenne pepper
3 cups Hot cooked rice
1/4 cup All-purpose Flour
1 lb Medium or Large Shrimp, shelled and deveined
1 8oz Can of tomato sauce
1/4 cup Chopped green bell pepper
2 Bay leaves
1/2 tsp Thyme
2 Lemon slices, seeded


1. Heat oil over medium heat in large skillet. Blend in flour, stirring constantly, until brown (do not scorch).

2. Add water gradually and cook until thick and smooth.

3. Add remaining ingredients except rice. Cover and simmer 12 - 15 minutes.

4. Remove bay leaves and lemon slices.

5. Serve spooned over hot cooked rice.
