Fiesta Shrimp

2 servings


1 lb Medium or Large Shrimp
2 Tbs Butter
1 cup of corn kernels
1 cup of Salsa
Flour tortillas
Grated blue cheese
Black beans
Salad


1. Peel and devein the Shrimp.

2. In a wok on medium, add 2 Tbs butter.

3. When melted, add Shrimp.

4. Stir quickly til the Shrimp has turned pink.

5. Add 1 cup of thawed corn and stir quickly to heat through.

6. Add 1 cup salsa and stir quickly to heat thoroughly.

7. Serve with Black beans, fresh tossed salad with crumbled blue cheese, and warm flour tortillas.
