Greek Shrimp and Potatoes

4 Servings


2 lbs Jumbo Shrimp, peeled and deveined
1 Medium chopped onion
3 Tbs Extra virgin olive oil
1 cup Water
1/2 tsp Salt
1 1/2 lb Diced potatoes
1 14 oz can of Diced tomatoes
1 Clove of garlic, finely chopped
1 Dash of cayenne pepper
2 oz Feta cheese
2 Tbs Chopped dill

1. Saute' onion in olive oil until tender. Add water with salt and bring to a boil.

2. Add potatoes and simmer until tender. Then add tomatoes, garlic, and cayenne.

3. Return to a boil, and simmer for 5 minutes.

4. Add Shrimp and cook until they are just done.

5. Serve in soup bowls and sprinkle with Feta cheese and dill.
