Shrimp Creole

Serves 4 - 6


2 lbs Large Shrimp, peeled and deveined
3 Tbs Butter
1 cup Onions, chopped coarsely
1 cup Green pepper, chopped
1 cup Chopped zucchini
1 cup Chopped celery
2 Cloves garlic, pressed
4 Large tomato, chopped
8 oz Tomato sauce
1/2 tsp Pepper
2 tsp Shredded fresh lemon peel
1/8 tsp Cloves
1 Bay leaf
1 tsp Thyme
1 tsp Honey
3 tsp Parsley


1. In a large saucepan, saute onion, green pepper, zucchini, and celery til tender in butter.

2. Add garlic and tomatoes and bring to a boil.

3. Reduce heat and add tomato sauce, pepper, lemon peel, cloves, bay, thyme, and honey.

4. Simmer 15 - 20 minutes, stir frequently.

5. Stir in Shrimp and heat thoroughly.

6. Serve over hot rice.
