2. Place oil in wok, add Shrimp and onion.
3. Stir fry 2 - 3 minutes until Shrimp turn white.
4. Add sliced cucumber, soy sauce, sugar and stir.
5. Cover wok and cook 3 minutes, lifting cover once to stir ingredients.
6. Lift cover up, add red pepper and salt, to taste.
7. Cover wok. Cook everything 2 more minutes and serve.
